Café Uba is a Colombian coffee business model founded in 2014 by Julio Cesar Madrid, a third-generation traditional coffee grower. Motivated by the desire to create a coffee company different from the traditional ones, he decided to innovate by transitioning into specialty coffee on his three farms: Riviera, Milán and Buenos Aires. He decided to focus on developing various fermentation methods which lead to differentiation and high quality in the sensory profiles of the coffees. Today, the acquired experience, combined with the good environmental conditions of their crops, has allowed them to win various quality awards for coffee both nationally and internationally, also winning in different barista championships around the world.he final results to draw conclusions that seek to improve the quality of their coffees.


Cultured Washed Caturra
When the cherry is picked, the embryo inside the seed begins a metabolic process preparing for germination. This process increases the temperature and the fluids exchange within the cherry.
Thanks to this process, the cherry can then be placed in bags for 10 to 12 hours in order to increase their temperature. This helps the bacterias to break the carbs into sugars, making the temperature rise even more.
Afterwards, the coffee is cooled down in a tank with water until it reaches 8 to 10 C°.
Following that, the coffee is taken out of the tanks and de-pulped. It is then placed in sealed containers to ferment for 6 to 8 days with fresh pineapple, fresh passion fruit, passion fruit essence and starter cultures.
Finally, the coffee is washed and put to sun-dry for 15 to 20 days.
