Coocentral Cooperative
Coocentral serves as the primary cooperative in Central Huila, they process lots from farms ranging in-between 2 to 3 hectares and located at altitudes ranging from 1400 to 2000 masl. Caturra, Castillo, and Colombia are the main varieties being grown there.
The cooperative boasts 3747 members, of which 2098 are active contributors, delivering their parchment to reception points in various local villages. Purchase points are located in Gigante, Garzon, Guadalupe, Suaza Tarqui, Pital, and Agrado.


Washed Colombia
This lot was processed using the washed method. Cherries first went through floating and de-pulping. They are then steeped in fresh water to ferment for a certain amount of hours. After that, the coffee is washed to remove any leftover mucilage and finally dried.

Ratio : 15g coffee for 230g water (1:15,3)
Water : soft water (50-100ppm) at 90° C
Extraction time: 2:40 minutes
Espresso recipe
Ratio : 18g in for 38g out (1:2,11)
Water : soft water (100-150ppm) at 93,7° C
