Worka-Wuri Chelchele station
This coffee was processed at the Worka-Wuri Chelchele station, located in the Gedeb woreda, within Gedeo. Established in 2012, the station is currently managed by Beyene. The station receives cherry from smallholder farms, each around 2 hectares in size, at altitudes ranging from 1950 to 2100 masl. This region benefits from fertile, reddish-brown and well-drained soil.
Washed Heirloom
The coffee composing this lot was cultivated at altitudes ranging from 1950 to 2100 masl. Before pulping, cherries undergo a quality inspection to remove immature and overripe ones. Pulping is then done using an Agaard machine, which sorts cherries by density without using flotation tanks. The pulped cherry is then fermented in a tank for 36 to 48 hours to remove mucilage. After pulping, the coffee is washed in washing channels and is then soaked for half an hour to one hour. Finally, the coffee is dried on African beds for 10 to 15 days and then stored in jute bags placed on bamboo pallets for a month. Allowing the flavours to develop even further.
