Alexander Silva

Alexander Silva is 20 years old and lives in a small village called Sector El Campo, in the district of Queromarca in Peru. From a very young age, he has been dedicated to coffee farming, learning from his parents, who are also coffee growers. The altitude of his parcels favors both the yield and quality of his production.


Washed Caturra and Bourbon

This Caturra and Bourbon lot was grown at 2108 masl in the Cajamarca region at El Rejo farm. After harvest, the coffee cherries are being floated in order to remove any unwanted cherries. They are then de-pulped and steeped in water tanks for 14 hours. Finally, the coffee is washed to remove any leftover mucilage and is sun-dried for 20 days.

Ratio : 15g coffee for 230g water (1:15,33)

Water :  soft water (50-100ppm) at 90° C

Extraction time: 2:20 minutes


Espresso recipe

Ratio : 18g in for 36g out (1:2)

Water : soft water (100-150ppm) at 93,7° C

Extraction time: 33 seconds
