Fazenda Nunes

Fazenda Nunes, in Patrocínio, Cerrado Mineiro, spans 600 hectares with over 25 arabica varieties. We met Gabriel Nunes, an agronomist, in 2023 when his coffee featured on our Moon Safari. After visiting his farm in 2024, we began working together for the Duchess and Duke blends.

Gabriel excels at producing chocolate-forward espresso profiles with great sweetness and mild acidity. The fazenda uses advanced technology for harvesting and milling, but keeps quality and sustainability first. Excellent terroir and practices like selective machine harvesting and full sun-drying is what sets their coffees apart. 

For our blends, we use Gabriel’s Topazio and Bourbon varieties. Cherries are picked in three passes and fully sun-dried, resulting in a cup with chocolate, sweet almond, and mild orange-like acidity.

Fazenda Santa Hedwirges

In 2024, we traveled to Hugo Brito's Fazenda Santa Hedwirges. The Brito family’s innovative approach is reflected in their advanced processing centers, which ensure consistent quality across 1200 hectares. With varieties like Catuai, Mundo Novo, and Arara, Hugo’s meticulous care, including a nursery for 300,000 trees, results in coffees of remarkable character. Our collaboration with Hugo showcases his commitment to tradition and quality innovation.

Recipe for double espresso

Short : In 18G / Out 40G / Time 28 Sec

Water : Use medium soft water (100ppm) at 93° C

Steps :

  1. Use a scale to measure your dose and yield (= brewed liquid). Use soft water (100-150ppm).
  2. Grind 18g of coffee at a fine espresso setting.
  3. Distribute the coffee evenly in your portafilter and tamp level.
  4. Lock in the portafilter, gentle but firm. Don't crack the coffee bed.
  5. Start the machine. Measure 40g of brewed liquid in your cup in 28 seconds.
  6. If the coffee runs too fast, grind finer. If the coffee runs too slow, grind coarser. Make small adjustments only. Discard the first shot after every change of grind size.
